Heirloom Tomatoes

Summer is synonymous with tomatoes! 

Heirloom Tomatoes & Mozzarella
8 servings

Ingredients
4-5 large heirloom tomatoes, sliced
1 lb. Fresh mozzarella, halved and sliced ¼ inch
1/3 cup red wine, sherry vinegar or balsamic vinegar
½ cup chopped parsley and chives
¼ cup basil chiffonade
¾-1 cup olive oil
Fresh cracked pepper and kosher salt

Procedure
1.     Alternate tomatoes, and mozzarella slices on a platter.

2.    In a bowl combine vinegar, herbs and oil, season with salt and pepper. Drizzle tomatoes with sauce just before serving.
