1 cup multi-grain pancake mix
1x5.3 oz.-container Light & Fit Greek yogurt (toasted coconut, banana or vanilla or strawberry)
½ cup unsweetened almond milk (or water)
Desired fresh fruit for topping (bananas, berries, peaches, plums, cherries, etc.)
Maple syrup for topping
1. In a bowl combine pancake mix with yogurt and almond milk, mix well to blend. Let batter rest 5 minutes before griddling and serving with fresh fruit and maple syrup.
Banana Pecan: Use Banana yogurt and top with bananas heated with the maple syrup and toasted pecans.
Strawberry Shortcakes: Use Berry yogurt and top with fresh strawberries and syrup.
Tropical Tower: Use Toasted Coconut yogurt and top with fresh pineapple and mango pieces.
